
- 4 chicken-breasts (cut, cube & skin)
- 1 tablespoon of cornstarch
- 1 tablespoon of dry sherry
- 1 tablespoon of soy sauce
- 1 green pepper (cut into 1/2-inch squares)
- 1 tablespoon of vegetable oil
- 1/2 pound mushrooms (cut into 1/2-inch cubes)
- 2 1/2 tablespoons hoisin sauce
- 1/4 cup cashews
Dust the chicken with cornstarch and coat it with dry sherry and soy sauce, then set aside. Stir-fry the green pepper for 1 minute in oil, then set it aside. Stir-fry mushrooms for 1 to 2 minutes. Sit them to the side. Stir-fry chicken 2 to 3 minutes or until done. Add Hoisin Sauce and cashews. Mix mushrooms and peppers with chicken and cashews. Heat until all ingredients are hot and serve.
